    1 Cup Egg Beaters
    4 small - cherry - tomatoes diced
    2 scallions chopped
    1 1/2 oz goat cheese


Chop tomatoes and scallions; add to Egg Beaters and stir. Heat non stick large frying pan to medium heat, and add mixture. Crumble goat cheese on top when egg mixture sufficiently set. Serve immediately.

Serving Size: Makes 1 large or cut in half for two small servings.
