    6 med baking potatoes
    21/2 cups cauliflower florets
    3tbs butter
    2tbs low sodium chick broth
    1tbs EACH chopped fresh chives and parsely
    1tsp chopped fresh tarragon
    1/8 tsp garlic


heat oven to 350
prick potatoes w/ fork bake for 1hr or until tender
let cool for 5 min
halve potatoes length wise, scoop out flesh leaving 1/4" thick shell
In saucepan of boiling water, cook cauliflower 4 min or until tender
mash scooped potato and cauliflower with butter, broth, garlic and herbs
heat broiler, scoop mixture into potato shells and broil for 1 min or until golden brown

Serving Size: makes 12 serves of 1/2 potato
