Introduction

Great way to use up those mushy bananas. My next batch I am going to try it with Stevia, if I can figure out the proper ratio.. :) But even with using sugar, each slice (and mine are kindof thick) is only 237 calories, and one slice is a beautiful breakfast with my coffee. Ingredients

    3 cups flour
    1 tsp baking powder
    1/2 tsp baking soda
    3/4 cup sugar
    2 eggs
    1 tbsp vanilla
    2 medium bananas, sliced lengthwise
    1/2 cup walnuts, chopped

Directions

On dough setting, let it mix for 3 minutes, and it will mash the bananas. Scrape down the sides occasionally. Add walnuts in the last minute of mixing.
Turn on bake setting, (usually about 50 minutes depending on your machine), and check for "light" setting. Let it do its thing!
Check after its done baking, with toothpick. should come out clean. If dough sticks to it, cook additional 10 minutes at a time. (the first time I tried this recipe, it was ready in 50 minutes.. The second time, it took 70 minutes. Go figure! I guess maybe the weather really does play a factor in baking...)
Pull the pan out of the machine, and let sit for 10 minutes. Then take it out of the pan so it can cool thoroughly. DELICIOUS!
