Number of Servings: 12


    2 cups whole wheat flour
    2/3 c sugar
    1 tbsp baking powder
    1/2 tsp salt substitute
    1/3 c minced crystallized ginger
    1 tsp freshly grated lemon peel
    1 pomegrante, seeds only
    1 cup 1% milk
    1 large egg
    1/4 c butter, melted and cooled


combine flour, 2/3 c sugar, baking powder and salt. blend well. Stir in ginger, pomegranate and lemon peel. Make a well in the center. In measuring cup blend egg, milk and butter. Pour liquid all at once into well. Stir just until moistened, it will be lumpy.
Spoon batter into 12 lined muffin cups, filling nearly to top. Bake at 425 for about 16 minutes.

  • very yummy. I substituted olive oil for butter and left out the ginger. I also used skim milk. It was delicious - 10/31/09
