    1 pound ground beef, extra lean
    1 pound ground turkey
    2 eggs
    1 1/2 cups low fat cheese (keep 1/2 cup for topping)
    2 tsp cumin (or to taste)
    2 tsp chili powder (or to taste)
    1 tsp garlic powder (or to taste, or fresh garlic)
    1 tsp salt
    3 flour tortillas
    1 cup salsa


Heat oven to 350F.

Cut the tortillas into small pieces (these will act like the bread crumbs). Mix everything but the 1/2 cup of reserved cheese. Put this on a parchment lined baking sheet and form a loaf shape about 1 1/2-2" tall.

Bake in the oven for 55-60 minutes, or until it is 160 degrees in the middle. The last 10 minutes add the rest of the cheese.

Makes about 12 1" slices.

I am going to serve it with black beans, corn, and whole grain rice. You can top it with lettuce, tomatoes, and sour cream if you'd like.
