    1-8oz carton Egg Whites
    1 Cup Chopped Spinach
    1/4 cup Feta Cheese
    1/2 cup Chopped Red Bell Pepper
    6 Jimmy Dean Turkey Sausage Links
    2 T. Chopped Shallots
    Green Chile Salsa (optional)


Spray skillet with cooking spray, add cut-up turkey sausage and chopped red pepper - saute for about 2 min. Add egg whites, stir. When eggs are almost done, add crumbled feta and chopped shallots. Pepper to taste.

Garnish with Green Chile Salsa.
