Number of Servings: 6


    2 TB butter*
    2 TB flour*
    1 can fat free, reduced sodium chicken broth*
    * -- Can use 2 cups leftover gravy instead

    8 oz diced leftover turkey breast
    1 can great northern beans, drained and rinsed
    6 medium crimini mushrooms, sliced
    1 medium yellow onion, chopped
    1 package frozen peas and carrots
    4 sliced bacon, finely chopped
    3 cups mashed potatoes
    Salt and pepper


Melt the butter in a small sauce pan. Whisk in the flour and brown slightly for 3-4 minutes. Whisk in the chicken broth and bring to simmer to create a gravy. Salt and pepper to taste.

Meanwhile, chop the onion, bacon, turkey, and mushrooms and add the to bottom of the crock pot. Add the peas and carrots and stir in the gravy.

Cover with the potatoes and cook in the crock pot 3 hours on high or 6 hours on low. Shortly before service, add the cheese to the top to melt.

Serves 6.
