Ingredients

    2 cups garbanzo beans
    1 cup spinach
    6 ounces marinated artichoke hearts drained and rinsed
    1 clove garlic minced or pressed
    2 tablespoons tahini
    1 lemon
    1/2 tsp lemon zest
    2 tbsp extra virgin olive oil
    1/4 cup water
    1/2 tsp kosher salt

Directions

In a food processor combine all ingredients except water and salt. Process until smooth, add water to thin if necessary, salt to taste.

I like to refrigerate and eat chilled with fresh vegetables.
