    Zucchini, 8 cup, sliced
    Red Ripe Tomatoes, 3 large whole (3" dia)
    Onions, raw, 0.5 cup, chopped
    Garlic, 4 tsp
    Cheddar or Colby Cheese, Low Fat, 1 cup, shredded
    Water, 3 tbsp
    salt to taste


Slice Zucchini, chop onion and tomatoes. Put into a sauce pan with garlic, water and salt. Simmer covered for 30 to 40 minutes. Remove from heat put cheese on top recover and let melt.
