    Red Ripe Tomatoes, 7 medium whole (2-3/5" dia) (remove)
    Celery, raw, 3 stalk, small (5" long) (remove)
    Onions, raw, 1 small (remove)
    Garlic, 3 clove (remove)
    Ginger Root, 10 grams (remove)
    Vegetable Broth, 100 grams (remove)
    Salt, 1 tbsp (remove)
    Pepper, black, 1 tsp (remove)
    *Extra Virgin Olive Oil, .7 tbsp (remove)


In a pan, saute garlic, onions, celery and ginger.
Add chopped tomatoes and lemongrass.
Add some vegetable stock and cook till tomatoes are soft.
Cool down and blend. Strain after.
Cook again over flame and add salt and pepper to taste.
Add grated ginger or another stalk of lemongrass if flavours are not coming through. Add extra water or stock for consistency of your choice.
Serve with a garnish f chopped chives and celery leaves.
