    1 lb boneless, skinless chicken breast
    5 tbps olive oil
    1 1/4 tsp salt
    1/2 tsp pepper
    3/4 lb whole wheat pasta
    14 oz can of artichoke hearts, drained, rinsed and cut in wedges
    1 tbp red wine vinegar
    2 tbps parmesan cheese, grated


Coat chicken in 1 tbsp of the oil and season with 1/4 tsp salt and pepper. Grill, let rest 5 minutes and then cut into slices. Cook and drain pasta. In large bowl, toss pasta with 1 tbsp olive oil. Make sure to coat all pasta so it won't stick together. Add in chicken, artichokes, remaining 5 tbp oil, vinegar, remaining 1 tsp salt, 1/4 tsp pepper and the parmesan. Toss.
