    Rice flour, white, 1 cup
    Tapioca Flour, 3/4 cup
    Corn Starch, 1/4 cup
    baking powder, 3 tsp
    Baking Soda, 1.5 tsp
    Salt, 1 tsp
    Cinnamon, ground, 1 tsp
    Granulated Sugar, 1-1/2 cup
    Canola Oil, 3/4 cup
    4 egg whites
    Mayo, 1 tbsp
    Carrots, raw, 2 cup, grated
    Pecans, .5 cup, chopped
    Crushed Pineapple, 8.5 oz
    * Butter, salted,1/2 cup
    * *Philadelphia Fat Free Cream Cheese, 8 oz
    * *Confectioner's Sugar, 2 cup
    * Vanilla Extract, 1 tsp


Preheat oven to 350F - greased 9x13 baking pan.
mix together the dry ingredients add the sugar, corn oil, eggs and may stir well. Add the carrots, nuts and pineapple. Spread in the baking pan and bake for 30 - 45 mins. frost with the cream cheese frosting - makes 16 servings
If you count in the frosting on each piece it would be 401 calories per serving :) Enjoy
