    24 oz chicken breasts, no skin
    1/4 cup olive oil
    8 cloves garlic
    juice from one lime (1/4 cup)
    8oz (3 cups) dry uncooked whole wheat penne pasta
    salt to taste


Serve with salad and vegetable sides for a complete meal.


Cut the raw chicken into approx 1 inch cubes and saute with garlic and half the lime juice in half the oil (2 Tablespoons each of oil and lime juice).

Cook pasta and drain. Add chicken to pasta and pour in remaining oil and lime juice. Season to taste.

Serving Size: Divide evenly into eight 1-cup portions
