Number of Servings: 6


    2 pounds bonless chicken breast, cut into bite size pieces
    1.75 cup chicken broth
    5 small scallion chopped
    4 ribs celery chopped
    .25 cup red bell peper diced
    1 clove garlic chopped
    salt and pepper to taste
    .5 cup butter
    1 tsp cumin
    1 tbls chili powder
    1 can (10oz) diced tomatoes, prefer rotel
    1 cup water


Turn your slow cooker on and let it heat up while you prepare the vegies.
Saute' the scallions, celery, and bell pepper in the butter. Add chicken and cook until the color begins to turn.
Combine the chicken stock canned tomatoes,water,garlic, cumin, and chili powder in the warm slow cooker and add the chicken and vegies.
Stir once to blend.
Cover and cook on high for one hour, then turn the heat to low for 4 to 5 hours.
Garnish with Parmesan if you wish.
