Number of Servings: 16


    wet ingredients:
    2 eggs [room temperature]
    1/2 cup honey
    3 mashed ripe bananas [1 cup]
    3/4 cup heavy cream [liquid]
    1 stick [1/2 cup] butter, melted
    1 teaspoon vanilla

    dry ingredients:
    2 cups whole wheat flour
    1/4 cup Atkins bake mix
    1 cup splenda for baking
    1 1/2 teaspoons baking powder
    1 teaspoon baking soda
    1/2 teaspoon salt

    additional ingredients:
    1/2 cup chopped pecans

    optional ingredients:
    banana extract [for more banana flavor especially if omitina a banana or two - but i did not]

    note:Oven 350 to 325 degrees Fahrenheit
    bake 30 minutes in large bundt pan


-grease pan, set aside
-in small bowl melt butter
-in large bowl combine all dry ingredients
-to small bowl of butter add all wet ingredients and mix on low speed
-add wet ingredients to dry and mix on low to medium speed until combined.
-stir in pecans.
bake at 325 degree oven [because my oven gets very hot very fast] about 45 minutes [or until done in middle]
