Ingredients

    4 beef tenderloin steaks ( 4 oz each)
    1 cup sliced mushrooms
    2 garlic cloves
    6 tbs balsamic vinegar
    2 tsp cornstarch
    1 cup low fat low sodium chicken broth
    3/4 cup low fat sour cream

Directions

cook tenderloin for 5 minutes each side, set aside on a plate covered with tin foil or place in oven to keep warm while the sauce is prepared
add mushrooms and garlic, saute,
add balsamic vinegar ( it is strong you may want to reduce the amount)
blend cornstarch with chicken broth
add to mushroom mixture
add sour cream to thicken sauce, more or less may be needed
spoon sauce over steak and serve with baked sweet potato and veggie or your choice.

Serving Size: make 4 servings of 4 oz steak
