a yummy version of quesadillas with less then 10g fat per serving. a yummy version of quesadillas with less then 10g fat per serving.

    4 small white tortillas
    4 tbsp salsa
    4 tbsp fat free sour cream
    8 tbsp avacado
    1/4 cup diced onions
    2 cups iceberg lettuce (thinly chopped)
    8 oz mozzarella part-skim (grated)
    10 jumbo olives (diced)

    2 medium to large boneless, skinless chicken breast


1) cook chicken fully on medium heat in a lightly sprayed/oiled pan (15-20 min) once cooked cut or shred in pieces,then set aside.

2) place 4 tortillas on a baking sheet and coat each with 1 tbsp of salsa (dont grease them)

3) put a even layer of chicken on each tortilla

4) Evenly distribute the cheese, onions, and olives on each tortilla and fold in half.

5) Bake in over at 375 for about 10 minutes or until tortillas are crispy brown.

6) cut each piece into 4 pieces. Making 16 smaller triangle pieces.

7) serve 2 pieces on top of 1/2 cup of lettuce.AND 1 tbsp sour cream, and 1 tbsp of avocado served on the side
