Number of Servings: 2

Ingredients

    2 large eggs
    2 egg whites
    3 Tbsp. (.1875 cup) Feta cheese
    8 Asparagus spears
    2 oz. part skim (18%) Mozzarella cheese
    PAM cooking spray
    1 Grapefruit

Directions

Preheat medium size frying pan on medium high heat. Spray with PAM once hot. Add chopped asparagus to pan. Cook until darkened but still crispy. Add crumbled feta cheese, let melt, stirring occasionally. Beat eggs and egg whites, add to pan. Flip once cooked half way through. let cook 1-2 min. Top with mozzarella cheese. For best results, broil 3 min. so cheese melts.
