You can use any meat or veggies and these freeze well for a quick breakfast. You can use any meat or veggies and these freeze well for a quick breakfast.
Number of Servings: 14


    18 eggs
    1 cup 1% milk
    1 1/2 cups shredded mozzarella cheese
    1 1/2 cups shredded colby jack cheese
    8 oz pkg of diced ham (sausage can be substituted)
    3/4 cup Hormel Real Bacon Crumbles (optional)
    1 diced red or yellow pepper
    1 medium onion, diced
    1 8oz pkg of fresh mushrooms
    1 pkg of broccoli, diced (approx. 3 cups)


Precook all of the vegetables in the microwave until tender. Then mix all of the ingredients together in a large bowl. Spoon 1/3 cup of the mixture into each greased muffin cup. Bake at 350 for 20-25 minutes until set in the middle. These can be enjoyed immediately, stored in the refrigerator for serveral days or frozen for use later. They can be reheated in the microwave for a quick breakfast! The nutritional information is based on 3 egg cups per serving.
