Introduction

Number of Servings: 6

Ingredients

    2 large carrots diced
    2 - 3 stalks celery diced
    1/2 yellow onion diced
    3 cloves garlic minced
    2 -3 TB olive oil
    28 oz. can of crushed tomatoes
    tsp oregano
    1/2 to 1 tsp crushed red pepper (cayenne)
    salt to taste

Directions

Saute carrots, celery, onion and garlic in olive oil. Add canned tomatoes, organo, red pepper and salt. Bring to almost boil then simmer on med. low for 30 to 45 minutes. Serve on cooked pasta or spaghetti squash.
