Ingredients

    1 1/4 pounds jumbo shrimp
    1 tablespoon olive oil
    1 1/2 teaspoons Cajun spice mix
    Salt to taste
    2 tablespoons chopped fresh parsley
    1 tablespoon fresh lemon juice

Directions

1) remove the shells and devein the shrimp; rinse and pat dry

2) in a large bowl, combine the oil, cajun spice mix, and salt if using. Add the shrimp and toss until covered with the spice mixture.

3) Let stand for 10-15 min

4) in a large nonstick skillet, cook the shrimp over meduim high heat until just cooked, about 2-3 minutes per side.

5) Stir in the parsley and lemon juice.

Serving Size: serves 4
