Introduction

This recipe will make banana bread or muffins. This recipe will make banana bread or muffins.
Number of Servings: 18

Ingredients

    1 3/4 C Whole Wheat Flour
    3/4 C Sugar
    1 tsp. baking soda
    1/2 tsp. salt
    2 eggs
    4 ripe bananas
    1/2 C unsweetened applesauce
    1/4 C buttermilk
    1 tsp. vanilla



Directions

In a large bowl, stir together flour, sugar, soda and salt. In another bowl, combine eggs, bananas, applesauce, vanilla and buttermilk. Mix in flour mixture. Divide mixture into 18 muffin cups using an ice cream scoop. Cups will be about 3/4 full. Bake at 350 degrees for 24 minutes. If you decide to make bread, bake for 1 hour and 15 minutes in a loaf pan.
