    1/2 large onion, chopped
    1 medium stalk celery, chopped
    1 clove garlic, minced
    1 tbsp olive oil
    4 cups sliced mushrooms
    1 large potato, diced
    19 fl oz can white kidney beans
    900 ml box fat free chicken broth


Makes 6 Servings, 1 cup each

Saute onions and celery in olive oil until soft.
Add garlic, stir one minute
Add mushrooms and cook until softened
Add potato, beans and broth.
Bring to boil and simmer 30 minutes
Cool and process in food processor or blender

(optional, not in nutrition calculation, add extra potato and/or low fat milk to make thicker and more creamy)
