    1 tsp Butter, unsalted
    1/4 cup cooked drained Spinach
    1 T. cream or half and half divided over 2 eggs
    1 T. Parmesan Cheese divided over 2 eggs
    shake of Tabasco Sauce over egg
    sprinkle of Nutmeg, ground over spinach
    dash of Paprika over top
    2 large Eggs


Place 2 ramekins in cold oven. Preheat oven to 400 degrees.
Heat frozen spinach. Drain if necessary.
Remove ramekins and butter the sides and bottom. Place spinach in ramekin and make a hollow in the middle of it. Sprinkle with nutmeg. Place a raw egg in the spinach "nest". Sprinkle a dash of Tabasco sauce over the egg. Pour half a tablespoon of cream over each egg. Sprinkle parmesan cheese over that. Top with paprika. Bake at 400 degrees for 10 minutes. Serve and enjoy.
