Number of Servings: 24

Ingredients

    2 large eggs
    1/2 c. Splenda
    3/4 c. applesauce (unsweetened)
    1 c. grated carrots or zucchini
    1 c. chopped walnuts
    1/2 c. raisins
    1/2 c. chopped dried cranberries
    (or other dried fruits, ie. prunes, apricots)
    1 c. flour
    1/4 tsp nutmeg
    1/2 tsp cinnamon
    1 c. rolled oats
    1 1/2 c. Cheerios

Directions

Whisk eggs, add Splenda and applesauce. Stir in grated carrots or zucchini (or a combo of both). Add walnuts, raisins, and cranberries.
In separate bowl, sift flour with spices, and add rolled oats. Add to wet mixture and stir well. Fold in Cheerios and bake on ungreased cookie sheets or parchment paper.

350 for 15 minutes. Makes 24 BIG ONES!
LESS THAN 100 calories per cookie.
