Introduction

A super easy, super tasty beef enchilada casserole. It keeps so well that I like to make one and eat it all week! I like it with sour cream, and my friend eats it with hot sauce. A super easy, super tasty beef enchilada casserole. It keeps so well that I like to make one and eat it all week! I like it with sour cream, and my friend eats it with hot sauce.
Number of Servings: 8

Ingredients

    2 cans (10 oz each) Red Enchilada Sauce
    1 package Flour Tortillas
    1 lb ground beef
    1 cup Chopped Onions
    2 teaspoons Taco Seasoning

    2 quart casserole dish
    large skillet

Directions

Sweat the onions lightly in a large skillet, then add the ground beef and taco seasoning. Brown the ground beef, making sure it is cooked through, then drain and discard any excess fat.

Tear tortillas into large strips, in the casserole dish. Then coat well with both cans of the enchilada sauce, making sure to get between the layers. Once the beef is cooked mix it evenly throughout the tortilla strips.

Bake at 400 degrees for 20 minutes or until bubbly and slightly browned on top. Enjoy!
