    8 large egg whites
    1/4 cup chopped onion
    1/2 cup chopped red bell pepper
    1/2 cup chopped mushroom
    1 pat butter
    2 cups fresh spinach
    1/4 cup shredded cheddar cheese
    1/4 cup water


saute veggies in butter for 5 minutes, add egg whites whisked with water and scramble. top with 1 tbsp cheese each serving.
