Ingredients

    1.5 Lb pork tenderloin
    1Tsp ground cumin
    1Tsp ground coriander
    1tsp ground black pepper
    .5 Tsp ground cinnamon
    .5 Tsp salt
    1-2 Tbsp olive oil.
    1 Cup pomegranate juice
    3/4 Tsp cornstarch
    1Tsp water

Directions

serves 6.
Stir together cumin,coriander,pepper,cinnamon and salt
rub meat with mixture to coat .
Heat oin in skillet brown tenderloin on all sides,reduce heat and cook pork untill done (145 degrees on thermometer)
this will take about 30 to 40 min.
Transfer pork to cutting board ,cover and let sit for 10 min.
While pork is resting add the pomegranate juice to skillet and boil down to 2/3 cup, stir together the cornstarch and water and whisk into juice,boil sauce until thickened slightly 1-2 min. Remove from heat and add the sherry vinegar to taste.( here you can add a pat of butter if you like)
Slice pork ,drizzle sauce over and serve.
A mash of potato and celery-root works well with this.
