Introduction

easy 30 min meal the whole family will love! easy 30 min meal the whole family will love!

Ingredients

    1 onion- chopped
    2 Tbls olive oil
    1 can Hunt's "Fire Roasted" tomatos( undrained)
    1 can trader joes artichokes( not in oil) undrained
    1 Tbls EACH- oregano, basil, onion powder, and Balsamic vinegar
    1 10oz pkg frozen spinach
    .5 jar Classico Tomato Basil Spaghetti sauce
    5oz whole wheat pasta( I like think ones like angelhair and vermicelli
    6oz cooked chicken breast chopped

Directions

Start water boiling in a large pot for pasta

In separate pot place oil and onion and cook over high till translucent( about 3 minutes) Add Canned tomatos, Canned artichokes( both with fluid) oregano, basil, onion powder and balsamic..cook dry about 10 minutes

Meanwhile when water comes to boil cook pasta to desired tenderness and drain.

WHen sauce is dry add chicken, spinach and classico sauce. Cook till spinach is thawed and sauce and chicken are cooked through.

Use scissors to cut pasta into bite size lengths and mix into sauce. - Stir well to incorporate. This sneaky tricj actually uses veggies to replace "pasta" so you;re getting in 2 full servings of veggies and less than 1 oz pasta per person( they'll never know!. If you have a few extra guests- you can easily add extra pasta to make this stretch top feed a CROWD!

I serve with a side salad and french bread.
