    7 oz. thin whole wheat pasta, such as angel hair
    4 medium zucchini, grated
    1-1/4-inch piece fresh ginger root, grated
    4 tsp. extra-virgin olive oil
    4 tsp. freshly grated Parmesan cheese
    4 green onions, finely chopped
    1-1/2 cups bean sprouts


Cook the pasta in a saucepan of boiling water according to the package directions. Transfer to a large serving bowl and mix in all the other ingredients. Serve immediately.
