    Corn Tortillas, 8 tortilla, medium (approx 6" dia)
    Scallions, raw, 1 cup, chopped
    Earth Island Nacho Cheese, 6 oz
    Hot chile pepers, .25 cup
    Yellow Sweet Corn, Frozen - thawed, 0.5 cup kernels


Divide fillings in 4 and spread evenly over 4 tortillas, place second tortilla on top.

Grease frying pan or sandwich griddle and cook on first side until chees melted and edges are brown then flip and cook for another minute.
Cut each quesadila in quarters.

Serve with salsa if desired.
