Introduction

This is my tasty low-fat version of migas which uses baked tortilla chips and only 1 whole egg with 2 egg whites. Served with corn tortillas instead of flour. Ingredients

    14 Baked Tostito's Scoops, crushed lightly
    1 large egg
    2 egg whites
    1/2 cup tomato sauce

    Salt & pepper to taste
    Hot sauce to taste (I used Cholula and Fire sauce)

    3 corn tortillas.

Directions

Beat egg and egg whites together in a small bowl, then scramble in a pan until fluffy. Add crushed tortilla scoops, tomato sauce, hot sauce and salt & pepper. Stir around until heated through.

Serve with3 fresh, warm corn tortillas.
