Introduction

A very filling soup for "down" days on a calorie cycling diet. This is a very thick soup you can easily add a second 4cup container of chicken broth to make it a thinner soup. Number of Servings: 6

Ingredients

    4 cups fat free chicken broth(low salt)
    1 large(28 oz) can diced tomatoes(no salt added)
    1 large(1.5cups) dice onion
    1 cup instant brown rice (or two cups cooked brown rice)
    4 cups mixed veggies( carrots, broccoli, &cauliflower)
    1 large(19 oz) can beans( navy, black etc)
    spices(2tsp curry powder, 1/2 tsp cayenne pepper, 2tsp italian spice mix)
    Optional (sourcream, grated cheese)

Directions

1) In a large pot cook broth, tomatoes, onions and instant rice for about 15 minutes. If using cooked rice add it in step 2.
2) Add rest of ingredients and cook until vegetable are done, about another 10 minutes.
3) Optional is to add a bit of sour cream or grated cheese to each serving. This is not included in the calorie count.
