    16 oz uncooked ziti
    1 T olive oil
    1 c chopped onion
    1 c chopped yellow bell pepper
    3 cl garlic, minced
    14.5 can diced tomatoes with basil, garlic, and oregano
    10 oz can Italian seasoned diced tomatoes
    4 c baby spinach
    1 c shredded smoked Gouda
    Cooking spray


Preheat oven to 375. Cook pasta to directions. Drain well. Heat oil in a dutch oven over med high heat. Add onion and pepper, saute 5 min. Add garlic to pan, saute 2 min or until onion is tender. Stir in tomatoes, bring to boil. Reduce heat and simmer 5 min, stirring occasionally. Add spinach to pan, cook 30 seconds until spinach wilts, stirring frequently. Remove from heat. Add pasta and c cheese to tomato mixture, tossing well to combine. Spoon mixture into 11x7 baking dish coated with cooking spray, sprinkle with remaining c cheese. Bake at 375 for 15 min until cheese melts and begins to brown.
