    5 cups cooked rigatoni
    2 cups grated mozzarella
    3/4 pound Barese sausage, I used andoulle sausage cut to bite size pieces
    2 cup cooked chicken breast diced
    1/2 cup chicken stock
    1 quart fat free half and half
    3 eggs
    1/2 cup parmesan


In hot skillet simmer sausage until golden and cooked. Add chicken turn as low as you can and cover. Boil pasta and drain. Beat 3 eggs and mix into ff half and half. Salt and pepper to taste. Add cream mixture to skillet and stir well. Add chicken stock and stir. Add pasta, parmesan, and 1 cup mozzarella. Stir. Place in 9 x 13 casserole and top with remaining mozzarella. Cover with foil and bake 45 min - 1 hour. It is done when you pierce the cheese and the cream doesn't run all over.

Serving Size: 12 servings in 9/13 casserole pan.
