I combined a couple different recipes into this creation. I combined a couple different recipes into this creation.
Number of Servings: 4


    1 TBS. oil
    2 large chicken breasts, boneless and skinless
    1/2 large onion, chopped
    1/2 tsp. garlic powder, or to taste
    1 tsp. basil, or to taste
    1 tsp. oregano, or to taste
    1/2 tsp. salt
    1/4 tsp. pepper
    1/2-1 cup pasta sauce
    1 can diced tomatoes (I used frozen diced tomatoes from my garden)
    2 TBS. balsamic vinegar (or use wine)
    1 6.5-oz can mushrooms


Heat some of the oil in large skillet.
Season chicken with herbs and seasonings.
Brown chicken on both sides. Set aside.
Heat remaining oil in same skillet. Saute onions until done.
Add the sauce, tomatoes, vinegar, mushrooms and chicken and bring to a boil.
Reduce heat and simmer for 20-30 minutes, until chicken is cooked through.
Serve over noodles or rice. (Not included in nutrition info.)

Makes approx. 4 1-cup servings.
