    2/3 cup plain flour
    1/4 cup butter (softened)
    1 egg
    1/4 cup soft brown sugar (Demerara)
    1/4 cup superfine / caster sugar
    1/2 cup chocolate chips
    1/4 cup chopped hazelnuts or peanuts
    teaspoon bicarbonate of soda
    1 teaspoon vanilla extract


Preheat the oven to 180C (350F.) Grease two medium baking trays or one large one.

Mix the sugar, fast dissolving (caster) sugar, flour, baking soda, butter and vanilla extract in a medium size bowl or food processor. Add the egg, chocolate and nuts and blend.

Spoon out golf ball-sized blobs of the mix on greased baking tray. Keep the blobs well apart; the mixture will spread out. Bake for 12 minutes or until golden brown. Cool on the tray for 2 minutes then transfer to a wire rack and cool for 15 minutes.

Cookies will keep in a tin for 2 days.
