Makes 1 LARGE spicy Chicken Taco Salad. You can double up on the meat sauce if you want to make 2 salads. Great way to use up left over roasted chicken breasts. Don't let the ingredient list scare you. It's simple to make. You can just use taco seasoning mix if you want, but there's a lot of salt in the seasoning mixes from the store. Ingredients

SALAD:
1 cup iceburg lettuce, torn up
1 cup fresh baby spinach, torn up
6 grape tomatoes, cut in 1/2
1 whole scallion, sliced
4 slices of cucumber, cut into 1/4s
CHICKEN SAUCE:
2 slices Roasted Skinless, Boneless Chicken Breast, diced
1/4 Tbls Onion Powder
1/4 tsp Garlic Powder
1/2 tsp Ground Cumin
1/4 tsp Ground Cayenne Pepper
1/4 Tbls Green Salsa Verde (any brand)
1/4 Tbls Taco Sauce (any brand)
1 Tbls Kraft Free Catalina Dressing
2 oz Water
Directions
Serving Size: Makes 1 large salad
Prepare Salad with lettuce, spinach, tomatoes, scallion and cucumber. Set aside.
Simmer diced chicken, spices, salsa, taco sauce and water for 5 minutes. Add dressing and let cool for 5 minutes. Put 1 ice cube in meat sauce to cool faster.
Pour meat sauce over salad and enjoy.
