Ingredients

2 pounds boneless skinless chicken breast
1 tablespoon olive oil
1 jar Heinz chicken gravy
1 can Campbell's chicken gravy
1 8 ounce can mushroom stems & pieces
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1/2 cup chopped onion
1 toe minced garlic
Dash or two of cayenne pepper
1/2 teaspoon dried parsley
coarse black pepper to taste
Directions
Dice chicken breasts into bite-sized pieces. Heat cast iron skillet over medium heat. Add olive oil. Season chicken with black pepper and parsley. When oil is hot, add chicken, mushrooms, peppers, onions, and garlic to pan. Stir frequently until chicken is thoroughly cooked. Do not overcook or meat will become stringy. Mix gravies and cayenne pepper together in a medium mixing bowl, then pour over chicken mixture. Server over warm rice or pasta (nutrition for which must be added separately).
Yields five one-cup servings.

The recipe shows two types of gravy and the nutritional breakdown per ingredient only shows one gravy. Are there calories missing in the nutritional info? - 9/10/11

It's been so long since I did the recipe calculation that I simply don't recall but I suspect the two brands are the same values or I'd have put them both. As I recall, I combined them because at the time I only had one of each and use them interchangeably. Sorry I didn't put both at the time!

another recipe that doesn't include rice in the ingredients (or nutritional info), yet calls for it in the instructions. will add the rice to my tracker too & try this one tonight - 4/14/11

My husband is not a rice eater and prefers his served over pasta and some mentioned they like it over toast. Perhaps I should have mentioned the other alternatives. Whatever choice someone makes, that will have to be added to their tracker, of course. I hope you enjoy it.
