    1/2 cup long grain brown rice
    1/2 cup brown sugar
    2 1/2 cups skim milk
    1 (398 mL) can light coconut milk
    1/2 tsp ground cardamom
    1/2 tsp ground cinnamon
    1 tsp coconut extract
    1/4 cup raisins
    1 egg
    1/4 cup fine coconut, shredded
    1/2 tsp I Can't Believe It's Not Butter


Combine the rice through raisins in a large saucepan. Bring to boil, reduce heat and simmer. Cook for 1 hour, or until rice is tender.

Remove from heat. Whisk egg in a small bowl. Add 1/2 cup of rice mixture. Whisk quickly. Add to the pot of remaining rice mixture and stir. Allow to cool slightly.

In small fry-pan melt the I Can't Believe It's not Butter. Add the coconut and toast just until golden.Stir into the pudding.

Makes 7 (1/2 cup) servings.
