Introduction

Serve over rice on top of corn tortillas or stuff corn shell taco envelopes and sprinkle with some nutritional yeast or other cheesy flavored vegan favorite if desired. Portioned for 1-2 servings of Taco filling. A little different variation from my previous recipe - less sweet. I used a pre chopped pepper mix so I am estimating that it was about 4 TBSP or .25 with a 2:1 green to yellow/red ratio. Serve over rice on top of corn tortillas or stuff corn shell taco envelopes and sprinkle with some nutritional yeast or other cheesy flavored vegan favorite if desired. Ingredients

    Walnuts, 1 oz or 14 halves approx.
    Red Ripe Tomatoes, .25 large whole (3" dia)
    * Sun Dried Tomatoes, 5-6 pieces
    * Cilantro, dried, 1 tbsp
    * *Cumin seed, 1 tsp
    Green Peppers (bell peppers), 2 tbsp (chopped)
    *Peppers and Yellow, sweet, red, fresh, 2 tbsp Chopped
    * Pepper, red or cayenne, 1/8 tsp
    *Genmai Red Miso, 1 tbsp (remove)
    *Dried Onion Flakes, 1 tbsp
    * Garlic, 1 cloves


Directions

Chop all your vegetables and add them along with your Miso and seasonings into your food processor and pulse until chunky/blended.

Chop or crush your walnuts seperately so they are about the size of ground beef crumbles.

Add everything together and mix - serve over rice on top of corn tortillas or stuff corn shell taco envelopes and sprinkle with some nutritional yeast or other cheesy flavored vegan favorite if desired.

Serving Size: Makes 1-2 servings of two tacos each
