Introduction

This tasty treat was a snack my best friend's mom use to make us back in Elementary School (a very long time ago). This granola is easy to make and yummy to devour with yogurt and fruit for breakfast or by itself for an afternoon or road trip snack. Ingredients

    4 cups Whole grain Oats
    1 cup of each (shredded coconut, chopped pecans, chopped almonds, chopped walnuts, raisins)
    1 pack of low-fat cinnamon graham crackers (ground)
    2 tbsp ground flax seed
    1/4 cup of splenda brown sugar blend
    2 tsp of salt
    1/4 cup of extra virgin light olive oil
    1 cup of honey (local if you can find it)
    1 tsp vanilla (if desired)

Directions

Preheat oven for 350 degrees.

Mix in large bowl, all dry ingredents.

In 2 cup measuring cup, pour in olive oil then honey (this will help with pouring the honey and keep it from sticking).

On low speed, slowly pour oil-honey into granola mixture until it is thoroughly mixed. granola will start to clump together.

Spread mixture into a greased baking dish so that the layer is less than an inch thick. Bake in the over for 10-12 min, than mix the granola well and reform layer and bake for 10-12 minutes more. The granola will start to brown. Mix and bake until the right browning to your taste.

Remove granola from oven and allow to fully cool. Granola with harden into big clumps or blocks. Break up to desired size.

Store in an air tight container and refrigerate for long periods of time.
