    4 links (12oz) al fresco Roasted Garlic Chicken Sausage
    1 cup long grain brown rice, dry
    15oz. can cooked black beans, drained and rinsed
    1 large tomato, diced
    1 medium yellow onion, diced
    juice of 1 lemon
    2 cloves garlic, finely chopped
    1 tbsp olive oil
    1 tsp ground cumin
    salt and pepper to taste
    hot red pepper flakes
    2 oz jared roasted red pepper strips, chopped


In pot, cook rinsed rice in 2 cups water, according to package directions, when done fold in beans.
Meanwhile saute onion, garlic, red pepper (strips and dried flakes) in oil for about 5 minutes in large fry pan.
Add sausages, sliced on the diagonal into 1/2" pieces, tomato and all seasonings to onion mixture in pan.
Cook for 3 minutes stirring as needed.
Combine onion sausage mixture with rice and beans, add fresh lemon juice and serve.

Serving Size: makes 6, one cup, servings
