    1 1/2 cups brown rice
    2 TBS olive oil
    1 chopped onion
    1 cup chopped fresh mushrooms
    1 tsp salt
    1/2 tsp cinnamon
    3 cups water or homemade chicken broth


Saute the onion in 1 TBS of olive oil. Add mushrooms and continue to sautee. Remove from pan, add the other tablespoon of oil and saute the rice. Mix with the veggies, add salt and cinnamon. Add water and bake at 350 for about an hour. Can alternately make this in a rice cooker.
