Ingredients

    half a yellow pepper, chopped
    half a red pepper, chopped
    half an orange pepper, chopped
    2 scallions, chopped
    8 large eggs
    2 cups spinach
    1/4 cup crumbled feta cheese (divided between servings)
    1.5 cups salsa (divided between servings)


Directions

chop peppers and scallion. saute these in a large frying pan until cooked. meanwhile, beat eggs in a bowl. Add eggs to frying pan. Cook and stir frequently. When almost cooked, add spinach and continue cooking and stirring until spinach is wilted. Put on plate and top with salsa and feta cheese
