    * 100% Whole Wheat Sandwich Thin, 1
    * Light Cream Cheese, 1 tbsp
    * Blueberries, frozen (unsweetened) thawed, .25 cup
    * Strawberries, fresh, 1 cup, sliced
    * Jams and preserves, sugar-free, 1 tbsp
    * Egg, fresh, 1 large
    * Unsweetened Almond Milk, 1 cup
    * Maple Syrup, 1 tbsp
    * Cinnamon, ground, 1 tsp
    * Vanilla Extract, .5 tsp (remove)
    *Smart Balance Light Buttery Spread with Flax Oil, .1 tsp


Spread softened cream cheese on inside of 1/2 sandwich thin. Spread the other half with blackberry jam. Place thawed blueberries on cream cheese. Place pieces together like a sandwich.

Heat a non stick frying pan over medium low heat. While it is heating, mix egg, cinnamon, vanilla and 2 tablespoons of almond milk in a shallow dish. Place sandwich in egg mixture. Coat well. Turn over. Coat other side. Spray skillet with non stick cooking spray. Place sandwich in skillet. Cook 2-3 minutes per side til golden brown. Flip over. Cook another 2-3 minutes til golden on other side.

Remove from heat. Turn pan off. Top with buttery spread and maple syrup. Serve with strawberries on the side and the rest of almond milk in a glass.

I like to sprinkle additional cinnamon on top just before adding the maple syrup.
