    2 cups sugar snap peas
    1 tbsp olive oil
    1 tbsp red wine vinegar
    black pepper
    2 tbsp capers drained
    1/4 cup red onion, thinly sliced
    2 oz kalamata olives, pitted and sliced in half
    2 oz fresh whole milk mozzarella, diced into 1/2" chunks


Prepare an ice bath. In a medium sauce pan, bring some salted water to boil. Boil the snap peas for 2 minutes or until crisp-tender. Drain, rinse, and place in ice bath to stop cooking. Drain and set aside.

In a medium bowl, whisk together olive oil, vinegar and pepper. Add in peas and remaining ingredients. Toss to combine.

Serving Size: Makes 4 (1/2 cup servings)
