    16 oz shredded cheese (cheddar or mexican blend)
    12 corn tortillas
    1 small onion
    1 lg can of Enchilada Sauce
    4 chicken breast


Preheat oven to 400 degrees

Brown the chicken in a skillet, once browned shred the chicken. Chop the onion finely. Spray the bottom of a casserole dish with non stick spray. Pour some enchilada sauce on the bottom. Layer several tortillas to cover the bottom - but don’t overlap too much. Cover with Chicken, sprinkle with cheese, onion and enchilada sauce. Repeat 3 or 4 times until you have almost filled the casserole dish. The last layer should be tortillas and cover with enchilada sauce. Sprinkle with cheese and cover with foil. Bake for 20-30 minutes at 400 degrees until bubbly. Remove the foil for the last 10 minutes for a crispy top.
