    1 lb lean ground beef
    1 onion, chopped
    3 cloves garlic, minced
    2 cans red kidney beans, drained and rinsed
    1 can black beans, drained and rinsed
    1 can yellow corn and liquid
    1 fire roasted red bell pepper (optional), diced
    1 large can chopped or diced tomatoes
    1 15 oz can tomato sauce
    2 Tbsp tomato paste
    Maybe a cup of water
    2.5 Tbsp chili powder
    1 Tbsp cumin
    2 Tbsp white or brown sugar
    Some red pepper flakes to taste, or some hot sauce
    a little oregano
    a little rosemary
    1 tsp salt
    1 tsp pepper


I just use one pot for this.
Brown the meat in the pot and drain grease.
Add onions and cook til translucent.
Add all other ingredients and cook as long as you want; the longer you cook it, the better it gets, IMHO! You might need to add water if it gets too thick, or cook it down if it's too watery.
I serve it with a little Trader Joe's extra-sharp Celtic cheddar cheese (also IMHO the ONLY lowfat cheese worth eating) and a little reduced-fat sour cream on top.
It's also good reheated and eminently freezable.
