    1 med. apple, cored but left intact
    4 or 5 tsp brown sugar (not packed)
    .5 tsp ground cinnamon (or to taste)
    approx. 10 raisins
    .25 cup unsweetened apple juice


Core the apple with an apple corer, but leave the apple intact. Place the cored apple in a microwavable dish. Mix together the brown sugar, cinnamon and raisins. Pour mixture into the center of the apple. Pour the apple juice over the entire apple. Microwave on high for 2 minutes, and then at a lower power (60-80%) for 1 or 2 minutes more. Allow to cool. Can be served with cool whip or ice cream. (These are not counted in calorie count)

  • I would make it again but peel the apples and only use 1 oz of apple juice. I had slow churned ice cream with it. Yummy! - 11/1/07
